What is apple cider vinegar?

The term vinegar derives from Latin acētum, whose etymological root is ak- (being pungent), of the verb acēre (sour).

Apple cider vinegar, otherwise known as ACV, is a food vinegar made from cider or apple must. Apple cider vinegar has a medium or pale amber color. The unpasteurized or raw one contains the so-called ‘mother of vinegar’, that is a filamentous sediment made up of a real bacterial colony. The vinegar mother has a similar appearance to a spider web or an opalescent film and can give vinegar a greater density, as well as less transparency.

Apple cider vinegar is widely used in condiments for raw vegetable salads, in marinades, in vinaigrettes, as a food preservative and in chutneys (typical condiments of South East Asia). Apple cider vinegar is produced by fermenting the juice of crushed and squeezed apples. Yeasts are added to the liquid to start the process of alcoholic fermentation, so that the sugars can be transformed into alcohol.

Then another fermentation process starts, for which the alcohol is converted into vinegar by acidifying bacteria (genus Acetobacter); in this way, apple cider vinegar acquires the right content of acetic acid and malic acid.

Apple cider vinegar has always been considered a healthy product and its fields of application (many of them only theoretical, not to say fanciful) are different: anti-flu, anti-wart, oral and skin disinfectant (for topical use) , digestive, reinforcement of immune defenses, stimulation of blood circulation, preventive calculations, mucolytic (in the vapors), mildly antitumor etc.

How to use apple cider vinegar?

How to use apple cider vinegarApple cider vinegar can be used as a dietary supplement, both in natural form, enjoying its probiotic characteristics, and in a dehydrated form. Natural apple cider vinegar should not be drunk directly; It is so acidic that it could damage tooth enamel and, more rarely, the esophagus. It is also essential not to use too much. It is advisable to dilute 1-2 tablespoons in a glass of water to be sipped with meals once or twice a day.

Various apple-based supplements are available on the market; most are in soluble capsules, tablets and powders. However, there is no regulation that establishes the minimum or maximum level of these products, which is why there is a considerable heterogeneity between the products; also for this reason, it is recommended to strictly adhere to the indications mentioned on the label.

Apple cider vinegar for weight loss

Apple cider vinegar (as well as many other types of vinegar and acidic foods) has long been proposed as a slimming product. However, it is not clear whether the hypothetically responsible mechanism of this property could be of a chemical, metabolic or nervous nature.

Researchers suggest that apple cider vinegar can activate some genes involved in fat breakdown. The effect is probably very bland, as claimed by the ‘Debbie Davis, RD’ dietician in Chicago: ‘Apple cider vinegar could confer some advantages in terms of management and weight loss, but it is certainly not a quick and independent solution to the overall diet’. It is also presumed that apple cider vinegar is able to prolong the sense of satiety, limiting the food intake accordingly, with a total energetic effect reduction effect.

The only study that tried to identify any slimming effects of apple cider vinegar was carried out in Japan. In the experimental, 175 obese and healthy people were divided into two groups; one took apple cider vinegar, the other of water every day for 12 weeks. The diets were similar and they all compiled a food diary. At the end of the study, those who used vinegar lost slightly more weight than those who consumed only water. On average, the group that consumed apple cider vinegar lost 450-900g in the 3 months of experimentation; however, the object of weight loss was restored almost immediately after discontinuation, which suggests that a placebo effect may have occurred during the experiment.

Apple cider vinegar contains chromium, which can alter insulin levels in the blood. For this reason, it is recommended that people with type 1 diabetes mellitus consult their physician before making a meaningful and systematic use of apple cider vinegar in their diet. On the other hand, the effect is desirable in those suffering from hyperglycaemia or type 2 diabetes mellitus.

Carol Johnston, PhD, director of the Arizona State University nutrition program, has been studying apple cider vinegar for more than 10 years and believes that its effects on blood sugar may be very similar to those of some drugs. ‘The anti-glycemic effect of apple cider vinegar (from cider) is very well documented,’ says Johnston, and explains that this product is able to obstruct certain stages of starch digestion.

‘It does not stop the absorption of starch at 100%, but it significantly reduces its entry into the blood by moderating the blood sugar’. Finally, Johnston emphasizes that ‘In the case of treatment for diabetes, the pharmacological intake must not be interrupted to replace it with apple cider vinegar. Anyone who wants to use it to lower blood glucose levels should first consult a doctor.’

However, not all nutrition experts are convinced of this property. ‘Trying to cure diabetes with apple cider vinegar is like trying to empty a flooded cellar with a teaspoon,’ explains Michael Dansinger, MD, director of the Diabetes Lifestyle Coaching program at Tufts University. In addition, he says: ‘Patients are advised to focus on their overall diet, as it is a strategy supported by much more research’.

Apple cider vinegar to lose weight: 5 winning combinations

It is now known that among the many virtues that apple cider vinegar possesses, one is particularly interesting for all those who have decided to lose a few extra pounds: in fact the usual consumption of apple cider vinegar stimulates diuresis, detoxifies and helps lose weight.

Apple cider vinegar to lose weightHowever, despite the good intentions, to drink even just a glass of apple cider vinegar, perhaps fasting, is not at all an easy task. This is why today I want to propose 5 alternatives through which you can combine apple cider vinegar, to make it less disgusting and more effective for weight loss.

Apple cider vinegar + honey

Honey has always been considered an elixir for health and mixed with fat burning foods or drinks, enhancing its effectiveness. For this purpose prepare a drink by mixing in 250 ml of water, 2 tablespoons of honey, two of apple cider vinegar and to drink it 30 minutes before meals. Alternatively you can use this combination to season salads or fruit salads.

+ green tea

Green tea increases the sense of satiety and consequently helps to overcome nervous hunger. Its properties become more effective by adding to a freshly prepared cup, two teaspoons of apple cider vinegar and 1 of honey or other natural sweetener. Drink the infusion 3 times a day: even the most lazy metabolism will accelerate!

+ cinnamon

Cinnamon is a spice that can be used to reduce blood sugar levels and stimulate metabolism. The combination with the apple cider vinegar promotes weight loss if it is taken with regularity and introduced into a controlled diet and to a healthy lifestyle. Grab a cup of water and pour inside half a teaspoon of cinnamon powder, 2 teaspoons of honey, two tablespoons of vinegar and a few drops of lemon juice. Stir well and take the drink 30 minutes before lunch.

+ salad

After preparing a salad with cucumber, onions, tomatoes and lettuce, season it by combining 2 tablespoons of apple cider vinegar, 2 tablespoons of water, 1/4 teaspoon of black pepper, 1/2 teaspoon of sugar (in the absence of pathologies that do not recommend its use) and a pinch of salt. Always accompany your main meal with a salad so seasoned and in a short time you will get unthinkable results.

+ orange juice

Orange juice is a source of vitamins especially useful for strengthening the immune system and address the ills of the season. Mix 2 tablespoons of orange juice with two tablespoons of apple cider vinegar and use the combination to season salads or fruit salads. In addition, a further seasoning can be achieved by adding apple cider vinegar, linseed and honey.

Apple cider vinegar and digestion

Apple cider vinegar and digestionAccording to Carol Johnston (see above), drinking apple cider vinegar in a meal rich in starches prevents its digestion and absorption into the small intestine. In this way carbohydrates reach the large intestine and nourish the bacterial flora by acting as prebiotic agents.

Debbie Davis (see above) recommends using unfiltered apple cider vinegar, ‘the type of cloudy vinegar, where you can see a kind of blob in the bottle’. That species of ‘algae’ is known as ‘the mother’ and is saturated with probiotic agents. ‘Thanks to the presence of probiotics, this type of vinegar is able to support immune function and, for some people, also help to counter constipation,’ says Davis.

Apple cider vinegar contraindications

Apple cider vinegar, although more delicate than wine, is considered a very acidic food. The case of a woman who has complained of severe burns from esophageal irritation, later confirmed by the hospital diagnosis, after having taken a capsule of apple cider vinegar, has been documented.

Gastroparesis, a problem often caused by autonomic neuropathy, in turn commonly associated with type 1 and 2 diabetes mellitus, is the pathological slowing of gastric emptying. In this case, taking apple cider vinegar may be a far from healthy habit. In fact, some research has shown that the food in question is able to significantly worsen the gastroparesis.

According to Michael Dansinger (see above), it is also necessary to keep in mind that acetic acid and malic acid, typical of apple cider vinegar, tend to lower the pH of the blood causing a decompensation that could burden both the renal function, both on the bone tissue of already compromised people.

What happens if you drink apple cider vinegar every morning?

Can drinking apple cider vinegar early in the morning can help our health? Rachel Lapidos, editor of Well Good (American wellness magazine) wanted to see what happens to the body by drinking a bit of apple cider vinegar first thing every morning for a week.

Probably many of you have the habit of drinking water and lemon as soon as you wake up but only a few will have tried (it takes a bit of courage) to start the day with the apple cider vinegar! Taking it a bit like a challenge, Rachel Lapidos, who for a week drank some vinegar from apples to see if this drink, taken first thing in the morning, could be somehow beneficial for the organism as they say.

Despite the strong and not at all pleasing taste, apple cider vinegar is known to have different properties: ease digestion, deflates, improves the appearance of the skin, is anti-inflammatory, antibacterial, alkalizing, diuretic, helps the immune system , has satiating power and much more. In short, it is a food with a therapeutic value that is not often used by natural medicine.

At the beginning it was hard: apple cider vinegar in the early morning is not really the taste that a person wants to hear just wake up and gives a burning sensation to the mouth. The instinct is therefore to follow the intake with plenty of water.

The next sensation that Rachel reports is that of the action inside the body: a kind of burning that comes from the throat to the stomach. Is it normal? No! The woman has indeed fallen into a mistake: she drank a shot of pure vinegar, a dose not only excessive but also too strong if not diluted in water. Realizing the mistake, thanks to the consultation with a nutritionist, Rachel corrected the shot and from the following days she diluted a smaller dose of vinegar (1 or 2 tablespoons) in a cup of water, continuing to drink it every morning without having any discomfort – well, almost.

After a week of taking vinegar diluted with water, Rachel first notes a much more deflated belly but also a greater energy load than usual as well as a lower appetite that allowed her, for example, not to have an afternoon snack.

Even the appearance of the skin was visibly improved, it was in fact more toned and bright but in addition to vinegar the woman drank more water than usual to dispose of the acidity and taste remained in the mouth. So, at least in part, this advantage could be attributed to the greater intake of liquids.

Rachel was fine for the whole week, but as soon as she broke the vinegar habit, she got a cold. Perhaps a simple coincidence, but not to make mistakes and since basically this simple practice did not bother her then she decided to continue

Drinking too much vinegar in a continuous manner, given the high degree of acidity of this food, could cause damage to the enamel of the teeth but also problems of digestive type and burns to the esophagus. Therefore, if you want to experience this natural remedy, we advise you not to continue taking it for over 15 days, if anything, repeating the cycle treatment. Evaluate the reaction of your body but if you notice burns and discomfort, stop immediately. In case you have health problems or take medication, avoid the do-it-yourself and always feel the opinion of your doctor.

Apple cider vinegar diabetes effects

One of the most studied aspects of apple cider vinegar has to do with its ability to regulate blood glucose levels and thus relieve diabetes. There have been some important findings in this area, and experts say it could be the key to controlling the disease. Apple cider vinegar can be as effective as a drug for diabetes

Type 2 diabetes is the most common variant of the disease. Insulin and blood sugar levels are responsible for the condition. Diabetes develops when the body loses its ability to regulate the glucose present in the blood, either because it becomes resistant to insulin or because insulin production decreases. Therefore, it has been found that the nutrients found in Apple cider vinegar can actually relieve diabetes by optimizing insulin function and controlling blood sugar levels. The medical community has developed drugs that block the breakdown of sugar and starch. This reduces the risk of sugarcaps, thereby controlling diabetes.

Apple cider vinegar diabetes effectsRecently, however, researchers have discovered that Apple cider vinegar contains substances that generate the same type of blockage, which means that it has a similar effect to drugs. This is attributed to its high content of acetic acid, a bioactive substance found in almost all kinds of vinegar. Acetic acid prevents complete decomposition of complex carbohydrates, which is achieved by accelerating the process through which food leaves the stomach or by increasing the absorption of glucose through the tissues of the body.

One theory suggests that the product has the ability to inhibit the activity of certain digestive enzymes that break down carbohydrates into sugars, which slow down the process of conversion into glucose in the blood. It gives your body more time to metabolize the sugar in the blood, preventing it from reaching dangerous levels.

In order to benefit from the healing properties of apple cider vinegar, it is important to remember that it should never be overused. In addition, you should choose a product that is 100% organic. While there are plenty of different brands today, some of which are quite cheap, they have been subjected to refining processes that take away most of their advantageous features. Therefore, it is important to know where it comes from. Alternatively, you can choose to make apple cider vinegar at home using yeast apple juice.

To regulate blood glucose levels, we recommend that you consume it every day, but never more than two tablespoons a day. These should be diluted in water or other liquid to prevent irritation of the mouth and throat. Ideally, you should consume it on an empty stomach or before you fall asleep. But in the latter case it may cause you to pee during the night. Another way to consume it is like salad dressing or juices and smoothies. Both forms help avoid blood sugar peaks after some meals.

It is important to remember that the acids in vinegar can erode the tooth enamel and also cause burns on sensitive tissues. Never exceed the recommended amount. It is also important to remember that prolonged consumption may lower your bone density and potassium levels. To prevent this, we recommend that you follow the treatment for two weeks each month, then make a break for two weeks. If you have low potassium levels or suffer from osteoporosis, talk to your doctor before starting this type of treatment.

Apple cider vinegar is widely used by all those who suffer from overweight and cellulite. In fact, it is able to destroy the accumulation of fats and, moreover, it eliminates toxins.

Another of the benefits is the ability to take care of the lymphatic system, which helps the blood circulate more easily. It reduces arterial tension and levels of bad cholesterol or LDL. Apple cider vinegar, moreover, acts like sodium bicarbonate or lemon, helping the body to have a correct level of alkalinity.

To be able to reduce cellulite, you should take this treatment for two weeks every month. This means that apple cider vinegar treatment should be followed for 15 days, followed by a further 15 days break. Here’s what you need to do.Benefits of apple cider vinegar against cellulite

Apple cider vinegar to burn fat: does it work?

Of course, it does not do wonders, alone, but it seems that the apple cider vinegar can help the fat-burning action. This property of apple cider vinegar would derive from the role of acetic acid – contained in large quantities in apple cider vinegar – in the regulation of insulin production.

Insulin is the hormone that stores sugar inside cells, where it accumulates as fat, if it is not used. Furthermore, acetic acid may also play an important role in inhibiting the activity of some genes that promote fat accumulation. A balanced diet, proper hydration, physical activity and a bit of apple cider vinegar: here is a good recipe with fat-burning properties and weight loss!

Apple cider vinegar to lose weight: how to do it

Use it to season, as an alternative to salt and balsamic vinegar, on vegetables and salads. An unusual combination: a pinch of apple cider vinegar in fruit salads instead of lemon, or steamed fish. In addition to using it in the kitchen, take full advantage of the thousands beneficial properties (not just fat-burning and weight loss) of apple cider vinegar, taking it as a real remedy: mix 2 teaspoons of apple cider vinegar and 1 teaspoon of honey with little water and drink it as soon as you wake up before breakfast. For an enhanced effect, you can add a few drops of the Bach Flower Crab Apple, or the wild apple blossom.

Buy organic apple cider vinegar: the contraindications, in the case of a non-organic product, concern the accumulation of pesticides used in apple growing; pay attention to quantities: an excessive use of apple cider vinegar has as contraindications the occurrence of respiratory problems, skin allergies, nausea and risk of erosion of the tooth enamel.

Apple cider vinegar vs. apple cider

A close relative of apple cider vinegar, cider is an alcoholic beverage produced by the fermentation of apple squeezing. Of bittersweet taste, it can have between 4 and 8 degrees of alcohol. Known since ancient times, it was – and still is – highly appreciated in the Celtic area countries: Ireland, Normandy, Brittany: its production was widespread also in northern Italy, today remained active only in some Alpine areas.

Good to taste, cider also has digestive properties (thanks to its acidity level), rebalancing of the intestinal tract, antioxidants (thanks to polyphenols), remineralizing (thanks to the high content of calcium and potassium), diuretic (thanks to the acid malic).

Apple cider vinegar against water retention

Apple cider vinegar fights water retention. It is rich in iron and can be used to prevent cramps especially in athletes (swimmers). Apple cider vinegar is however an acid type food therefore its use is therefore to be contained in the uses and in the allowed quantities in order not to create an acid / base imbalance in the organism.

Within twenty-four hours the human body is able to produce up to a thousand / two thousand ml of urine volume. Any variation in this regard is due to external factors (environment and lifestyle) or internal factors (renal failure for example). More in detail we can say that in people whose production of urine is halved (oliguria with reduction to about 500 ml of urine in approximately twenty-four hours) there is a real risk of suffering from kidney stones. At poliuria instead the exact opposite happens; there is an increase in diuresis equal to a total volume of two liters and more still within twenty-four hours. Diabetics can suffer from polyuria. The almost absent low emission of urine is called anuria and is a sign of impairment of liver function. Nocturia instead is a typical disorder in men and people suffering from heart failure. This disorder can cause many other discomforts because the urine emission takes place almost overnight, thus disturbing sleep.

Therefore having a regular diuresis is a symptom of a state of wellbeing to be preserved for as long as possible. Among the many signals of the organism this is one of the most important to observe and keep under control carefully. The mechanism that allows the urine to be produced, transformed and carried to the bladder to be expelled is long and complex. Here we will consider aldosterone (a steroid hormone, cholesterol, essential in this process and produced by the adrenal gland). It intervenes in the equilibrium of the production of diuresis by regulating the entry, reabsorption and expulsion of sodium and potassium.

The release of aldosterone depends therefore on the amount of plasma sodium content in the plasma and the activation of the renin-angiotensin-aldosterone system for concentration instead of plasma potassium. This is why it plays a fundamental role in renal balance.

Apple cider vinegar against water retentionDiuretics promote their action by eliminating excess fluids and salts from the body with increased diuresis by stimulating renal work. Sometimes the use of diuretic drugs is necessary when dealing with major diseases such as high blood pressure (hypertension) or heart disease. Their intake must therefore be monitored and authorized by the doctor because improper and prolonged use can cause phenomena such as dehydration, sudden drops in pressure and not in line with the standard values, lack of minerals and therefore excessive or unjustified weakness and heart problems (arrhythmias).

In addition there are many types of diuretics (including herbal) that act on different fronts. Depending on the type of retention, it is therefore possible to use the most suitable remedy. The retention can in fact be renal, lymphatic, alimentary, circulatory or iatrogenic (from taking drugs) and so on. There are some foods in nature that have diuretic properties. This means that they possess natural draining properties in favor of a greater flow of urine. And apple cider vinegar is one of them.

It is important, in fact, to promote the elimination of toxins if the body cannot spontaneously do it alone through diuresis, and be aware of the functioning of our body and attentive to the signals that it sends us in order to prevent and maintain so in good condition all the ‘engine of our car’. Already, just like a car we should do the cutting and intervene where problems can arise before a simple malaise can turn into something more serious.

Speaking of diuresis, let’s focus on the kidneys. A decrease in diuresis associated with problems of retention, cellulitis and swelling could be linked to a poor functionality of these organs with a characteristic ‘bean’ shape but with multiple origins.

An excess of proteins in the daily diet and a low intake of water and liquids in general are to be considered as some of the most common causes together with the consumption of salt in doses higher than the requirements and also to the consumption of sugars. To avoid the problem in a simple and immediate way, the consumption of these two foods that cause the body to hold liquids abnormally should be reduced. That’s why in our ‘anti-retention therapy’ we should resort to a correction of our diet, before synthetic diuretics (but also natural).

In fact, apple cider vinegar is successfully used to promote that momentarily jammed mechanism that makes us inflate like a balloon. Food is the most natural and harmless cure we can easily find every day and at your fingertips without having to put your wallet in your hand.

Wine vinegar

The most famous and used in Italy, it is often an almost mandatory seasoning. When a non-precious wine is fermented, in general, the common vinegar is obtained while the quality one will obviously have a fine wine with a slow fermentation and an aging done in the wooden barrels. ‘Made in Italy’, however, is definitely the flavored vinegar, appreciated all over the world. Its color is a very dark brown and with a decidedly less pungent taste than the other vinegars. In order to orientate oneself in the choice it is necessary to give an eye to the label and verify the years of aging and the presence or absence of other ingredients such as sugar or colorings in addition to the must. If they were to be present, in addition to the must, the quality of the vinegar will certainly be lower.

Rice vinegar

The varieties produced are three: the transparent one with a very strong taste, the dark one, much more bitter and the red one that guarantees a sweet and sour taste. Its main use, as you can easily imagine, is about Japanese recipes, such as sushi, but it can also be used for sweet and sour recipes, salads and raw foods.

How to prepare apple cider vinegar at home

Apple cider vinegar is a very common product all over the world, known for its multiple uses at home, for medicinal purposes and for various beauty remedies. On the market there are many brands of apple cider vinegar, each with a different price, although most are very cheap. However, you do not always find a high quality product, spending little and, therefore, you cannot enjoy all the benefits offered by pure apple cider vinegar.Making homemade apple cider vinegar

Making homemade apple cider vinegar is much simpler than what is believed and is also very cheap. At the supermarket you will find a good price and ready to use, but not all brands are reliable. Some apple cider vinegars on the market, in fact, contain sulfates, a substance that acts as a preservative and that allows the product to maintain a homogeneous appearance. However, this substance eliminates some properties of apple cider vinegar and reduces its quality.

  1. Extract the juice

Try to use apples that are sweeter, not dented, mold-free and fresh. Also try to use organic apples that have been grown without the use of pesticides or other chemicals that can alter the fermentation process. Wash the apples well, peel and remove the core. Then, squeeze the pulp until about a liter of juice is obtained.

  1. Obtain must

Pour the apple juice you have obtained into a glass or earthen jar that is as wide as possible. Fill it only halfway up to allow the juice to ferment properly. Close it with a deflated balloon to prevent oxygen from entering and to allow the fermentation gases to expand. Make sure that the temperature at which the container is exposed is always between 18 and 20 ° C and left to ferment for 4-6 weeks.

The sweetness of apples is essential for producing this vinegar. For this reason, we advise you to use ripe apples. However, if these are still unripe and sour, you can add sugar. If you want to speed up the fermentation, leave a piece of peel on the apples before extracting the juice. Now proceed with the transformation into vinegar and start pouring the must into another container.

  1. Turn the must into vinegar

Pour the must into a large container and store it in a warm place, for example next to a stove or exposed directly to the sun. Leave it to rest for 3 days, covered with a clean cloth. After 3 days, remove the cloth and try to keep the container at an average temperature of 20 ° C. This step is very important because sudden changes in temperature can ruin the product. Mix the contents once a day to preserve the film that appears on the surface as a result of fermentation. Finally, filter the vinegar and store it in a bottle, preferably in a dark color, as direct light can easily ruin the product. The result will be an organic apple cider vinegar, without chemicals and which contains all its medicinal properties.

Ingredients

  • 5 liters of mineral water.
  • 1 kilo and a half of ripe apples.
  • 1 kilo of brown sugar.

Preparation

Wash and disinfect apples thoroughly using baking soda diluted in water. Once cleaned, cut into small pieces and mix with the sugar until a well-chopped mixture is obtained. Then, pour the 5 liters of water into a glass container and add the ‘puree’ of apples and sugar. Cover the container so that the air can enter, but not flies or other insects. Let stand for 10 days, mixing everything once a day with a wooden spoon. In the next 10 days, mix the mixture every other day. Finally, let it rest for another 10 days.

After filtering and bottling the mixture, in just 30 days you will have obtained a high quality apple cider vinegar. Avoid filling the entire container, as the fermentation process can continue until it explodes. We advise you to open the container at least once a day to avoid this effect.
