What is apple cider vinegar?
The term vinegar derives from Latin acētum, whose etymological root is ak- (being pungent), of the verb acēre (sour).
Apple cider vinegar, otherwise known as ACV, is a food vinegar made from cider or apple must. Apple cider vinegar has a medium or pale amber color. The unpasteurized or raw one contains the so-called ‘mother of vinegar’, that is a filamentous sediment made up of a real bacterial colony. Then another fermentation process starts, for which the alcohol is converted into vinegar by acidifying bacteria (genus Acetobacter); in this way, apple cider vinegar acquires the right content of acetic acid and malic acid.
Apple cider vinegar has always been considered a healthy product and its fields of application (many of them only theoretical, not to say fanciful) are different: anti-flu, anti-wart, oral and skin disinfectant (for topical use) , digestive, reinforcement of immune defenses, stimulation of blood circulation, preventive calculations, mucolytic (in the vapors), mildly antitumor etc.
How to use apple cider vinegar?
Apple cider vinegar can be used as a dietary supplement, both in natural form, enjoying its probiotic characteristics, and in a dehydrated form. Natural apple cider vinegar should not be drunk directly; It is so acidic that it could damage tooth enamel and, more rarely, the esophagus. It is also essential not to use too much. It is advisable to dilute 1-2 tablespoons in a glass of water to be sipped with meals once or twice a day.
Various apple-based supplements are available on the market; most are in soluble capsules, tablets and powders. However, there is no regulation that establishes the minimum or maximum level of these products, which is why there is a considerable heterogeneity between the products; also for this reason, it is recommended to strictly adhere to the indications mentioned on the label.
Apple cider vinegar for weight loss
Apple cider vinegar (as well as many other types of vinegar and acidic foods) has long been proposed as a slimming product. However, it is not clear whether the hypothetically responsible mechanism of this property could be of a chemical, metabolic or nervous nature.
Researchers suggest that apple cider vinegar can activate some genes involved in fat breakdown. The effect is probably very bland, as claimed by the ‘Debbie Davis, RD’ dietician in Chicago: ‘Apple cider vinegar could confer some advantages in terms of management and weight loss, but it is certainly not a quick and independent solution to the overall diet’. It is also presumed that apple cider vinegar is able to prolong the sense of satiety, limiting the food intake accordingly, with a total energetic effect reduction effect.
The only study that tried to identify any slimming effects of apple cider vinegar was carried out in Japan. In the experimental, 175 obese and healthy people were divided into two groups; one took apple cider vinegar, the other of water every day for 12 weeks. The diets were similar and they all compiled a food diary. At the end of the study, those who used vinegar lost slightly more weight than those who consumed only water. On average, the group that consumed apple cider vinegar lost 450-900g in the 3 months of experimentation; however, the object of weight loss was restored almost immediately after discontinuation, which suggests that a placebo effect may have occurred during the experiment.
Apple cider vinegar contains chromium, which can alter insulin levels in the blood. For this reason, it is recommended that people with type 1 diabetes mellitus consult their physician before making a meaningful and systematic use of apple cider vinegar in their diet. On the other hand, the effect is desirable in those suffering from hyperglycaemia or type 2 diabetes mellitus.
Carol Johnston, PhD, director of the Arizona State University nutrition program, has been studying apple cider vinegar for more than 10 years and believes that its effects on blood sugar may be very similar to those of some drugs. ‘The anti-glycemic effect of apple cider vinegar (from cider) is very well documented,’ says Johnston, and explains that this product is able to obstruct certain stages of starch digestion.
‘It does not stop the absorption of starch at 100%, but it significantly reduces its entry into the blood by moderating the blood sugar’. Finally, Johnston emphasizes that ‘In the case of treatment for diabetes, the pharmacological intake must not be interrupted to replace it with apple cider vinegar. Anyone who wants to use it to lower blood glucose levels should first consult a doctor.’
However, not all nutrition experts are convinced of this property. ‘Trying to cure diabetes with apple cider vinegar is like trying to empty a flooded cellar with a teaspoon,’ explains Michael Dansinger, MD, director of the Diabetes Lifestyle Coaching program at Tufts University. Apart from everything said about apple cider vinegar above, is an aromatic condiment that we can easily find in most of our handouts. Thanks to the great commercial availability, now, there is no longer limited to the classic wine vinegar to use as its alternative, but there are also rice vinegar and many others less known. Let’s see together what are the various types.
The most famous and used in Italy, it is often an almost mandatory seasoning. When a non-precious wine is fermented, in general, the common vinegar is obtained while the quality one will obviously have a fine wine with a slow fermentation and an aging done in the wooden barrels. ‘Made in Italy’, however, is definitely the flavored vinegar, appreciated all over the world. Its color is a very dark brown and with a decidedly less pungent taste than the other vinegars. In order to orientate oneself in the choice it is necessary to give an eye to the label and verify the years of aging and the presence or absence of other ingredients such as sugar or colorings in addition to the must. If they were to be present, in addition to the must, the quality of the vinegar will certainly be lower.
Traditionally used in Japanese gastronomic culture, rice vinegar is obtained by fermenting rice without adding preservatives or additives. The varieties produced are three: the transparent one with a very strong taste, the dark one, much more bitter and the red one that guarantees a sweet and sour taste. Its main use, as you can easily imagine, is about Japanese recipes, such as sushi, but it can also be used for sweet and sour recipes, salads and raw foods.

How to prepare apple cider vinegar at home
Apple cider vinegar is a very common product all over the world, known for its multiple uses at home, for medicinal purposes and for various beauty remedies. On the market there are many brands of apple cider vinegar, each with a different price, although most are very cheap. However, you do not always find a high quality product, spending little and, therefore, you cannot enjoy all the benefits offered by pure apple cider vinegar.
Making homemade apple cider vinegar is much simpler than what is believed and is also very cheap. At the supermarket you will find a good price and ready to use, but not all brands are reliable. Some apple cider vinegars on the market, in fact, contain sulfates, a substance that acts as a preservative and that allows the product to maintain a homogeneous appearance. However, this substance eliminates some properties of apple cider vinegar and reduces its quality.
- Extract the juice
Try to use apples that are sweeter, not dented, mold-free and fresh. Also try to use organic apples that have been grown without the use of pesticides or other chemicals that can alter the fermentation process. Wash the apples well, peel and remove the core. Then, squeeze the pulp until about a liter of juice is obtained.
- Obtain must
Pour the apple juice you have obtained into a glass or earthen jar that is as wide as possible. Fill it only halfway up to allow the juice to ferment properly. Close it with a deflated balloon to prevent oxygen from entering and to allow the fermentation gases to expand. Make sure that the temperature at which the container is exposed is always between 18 and 20 ° C and left to ferment for 4-6 weeks.
The sweetness of apples is essential for producing this vinegar. For this reason, we advise you to use ripe apples. However, if these are still unripe and sour, you can add sugar. If you want to speed up the fermentation, leave a piece of peel on the apples before extracting the juice. Now proceed with the transformation into vinegar and start pouring the must into another container.
- Turn the must into vinegar
Pour the must into a large container and store it in a warm place, for example next to a stove or exposed directly to the sun. Leave it to rest for 3 days, covered with a clean cloth. After 3 days, remove the cloth and try to keep the container at an average temperature of 20 ° C. This step is very important because sudden changes in temperature can ruin the product. Mix the contents once a day to preserve the film that appears on the surface as a result of fermentation. Finally, filter the vinegar and store it in a bottle, preferably in a dark color, as direct light can easily ruin the product. The result will be an organic apple cider vinegar, without chemicals and which contains all its medicinal properties.
Alternative recipe to prepare apple cider vinegar at home
This alternative recipe for preparing apple cider vinegar at home is much simpler and takes less time than the process described above.
- 5 liters of mineral water.
- 1 kilo and a half of ripe apples.
- 1 kilo of brown sugar.
Wash and disinfect apples thoroughly using baking soda diluted in water. Once cleaned, cut into small pieces and mix with the sugar until a well-chopped mixture is obtained. Then, pour the 5 liters of water into a glass container and add the ‘puree’ of apples and sugar. Cover the container so that the air can enter, but not flies or other insects. Let stand for 10 days, mixing everything once a day with a wooden spoon. In the next 10 days, mix the mixture every other day. Finally, let it rest for another 10 days.
After filtering and bottling the mixture, in just 30 days you will have obtained a high quality apple cider vinegar. Avoid filling the entire container, as the fermentation process can continue until it explodes. We advise you to open the container at least once a day to avoid this effect.
